Homemade Funnel Cakes

Crispy around the edges, soft inside, and buried under powdered sugar—the midway classic is easier to make at home than you think.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • Vegetable or canola oil, for frying
  • Powdered sugar, for serving
  • Optional: strawberries, whipped cream, chocolate sauce, caramel sauce, or cinnamon sugar

Directions

  1. Pour 1 1/2 to 2 inches of oil into a deep, heavy skillet or Dutch oven and heat to 375°F.
  2. Whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, milk, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, whisking just until smooth.
  5. Transfer batter to a squeeze bottle, piping bag, or funnel. Drizzle about 1/2 cup into the oil in overlapping circles and zigzags.
  6. Fry 1 to 2 minutes per side, until golden brown.
  7. Drain briefly on paper towels or a wire rack, dust generously with powdered sugar, and serve immediately.
OCW Kitchen Tip: Use a thermometer and keep the oil near 375°F. Never leave hot oil unattended, and never use water on an oil fire.
