Walking Tacos

All the flavor of taco night packed into a chip bag and ready to go. Easy, customizable, and built for a crowd.

Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup water
  • 8 individual bags of corn chips
  • Shredded cheese, lettuce, tomatoes, sour cream, salsa, jalapeños, green onions, or cilantro

Directions

  1. Cook the ground beef and onion in a large skillet over medium heat until browned and tender, 6 to 8 minutes. Drain excess grease.
  2. Add the garlic and cook 30 seconds.
  3. Stir in all seasonings.
  4. Add the water, reduce heat, and simmer 3 to 5 minutes until most of the liquid is absorbed.
  5. Gently crush each unopened bag of chips into bite-size pieces. Open and fold down the tops.
  6. Spoon warm taco meat into each bag and add favorite toppings.
  7. Stick in a fork and dig in.
OCW Kitchen Tip: For a crowd, arrange the meat, chips, and toppings buffet-style and let everyone build their own.
